For me the easiest is starter pokemon... mine always ended up highest out of mine. specially as you don't have to worry about what level it goes up to incase you don't have the right gym badges

For me, it was always Kadabra, no matter the version. The one downside, he can't defeat Dark-types like Absol on his own unless another move is taught to him. Maybe his Future Sight attack would work...

For some reason, my bird pokemon were always the easiest to train, especially swellow after it had evolved. I think it's the fact that their attacks are pretty strong, often resulting in quick fainting on the opponent's part, and they don't involve long graphics that take up time. It just goes really fast.

The Misdreavus I have on FireRed levels up FAST. While all the other Pokemon I train almost constantly are still at level 40, my Misdreavus is beginning to enter the 60's.

Cyndaquil is very easy to train in Silver. Especially when ya get to the Bellsprout tower. I got him to evolve to Quilava there and then.

the pokemon that are completely useless at the start are always very easy to train. Like Abra and Magikarp. Also Bug pokemon are always very easy to train, downside is that they are useless in higher levels. An exception to the useless pokemon training well rule would be Dratini.

It really depends on their experience growth rate, which can be found in specific guides.. But if you're talking about what feels the easiest to train, I'd say Espeon, because I love her so. ^_^
