I thought the theme to Megaman X5 was pretty badass, the slow opening with a sequence of Zero sleeping, great theme.

Final Fantasy VII : Jenova Boss Battle Music.I think the only reason I lose battles to jenova is because I get distracted from the music

I love the theme Scars of time of Chrono Cross. Also the opening is still one of my favorites of all my games.

Undoubtedly my favourite theme was done by anthrax in the game "WWF warzone"THe music was intense,energetic and made me feel like a wwf superstar myself lol!

Oh man, nothing can beat the accomplishments made by the composers for Chrono Cross! It's hands down the best there is on the PSOne! :-)
