Calcium Acetate is a food additive that is included in Table 3, and as such may be used in the following foods under the conditions of good manufacturing practices (GMP) as outlined in the Preamble of the Codex GSFA.

Ben Oil is an Oil pressed from the seeds of the Ben Oil or Horseradish tree. It is usually used as a perfume base, but can be used in food as a salad oil.

Asafoetida is spice which comes from the resin of the Asafoetida plant. The spice can be used as a condiment or in pickles and also be used in marinades.

It's roasting, usually done by brushing the dripping or it's own fat called basting (might be a typo). Making the skin of the duck (or food) crisp, and not making the food sort of dry.
