My main question is in FF8 can you still gain experience after your character reaches level 100 my main concern is that not all my GFs will reach their maximum level. Is it even possible to accomplish one without the other though, I mean if I level all my Characters up to 100 will all my GFs become 100 as long as I always keep them junctioned?

I must admit, I've never quite gotten far enough to deal with this problem myself. Regardless, I've never met a Final Fantasy (or any RPG, for that matter) where experience actually stops being rewarded when you reach max level. You simply don't level beyond that. I strongly suspect that your GFs will get whatever experience they will get, regardless of the fact that your characters can progress no further themselves.
