I like Omega Tom Hanks. I saw a video of him kicking butt, and I thought it was awesome. Although he is a bit overpowered...and annoying with his laughs.
So I guess my favorite character from a standard fighting game would have to be Ryu from the Street Fighter franchise. I like how most of his special moves like the Hadouken are easily performed and I like his back story.

Currently, just about any female character from DOA5. 
I must say, they did a really good job with the character models.
