Aria of Sorrow, not just for its story, but I like how collecting hearts replenishes your MP, rather than filling up your "heart supply" as with the previous Castlevanias.

AoS easily, Circle of the Moon was truly terrible. HoD was good, but it was far from refined.

I've played the three of them, and only AoS was appealing enough for me to beat, it has a great ability system, an original story, and an ending different from any other Castlevania ever

I think Aria of Sorrow is fun because it's different from classic castlevania game play. Plus you are Dracula!
