I have to agree with those who said that dry bones is the best in my book. Just everything about him is cool. How he looks, his carts, everything.

Since any character can use any car, my obvious favourite is bowser, because the extra weight helps knock people around :]

I like playing as Daisy or Wario. In double dash I used them together.Though using dry bones was pretty nice since I'm not used to being able to turn so well.
